JOB SUMMARY

The Director of Food Services is responsible for operational oversight and day-to-day activities at Fresh Gatherings Cafe location(s). This role coordinates the preparation and service of daily meals and offerings, grab 'n' go items, bakery, and full service coffee bar as well as catering requests. This position provides daily oversight to student workers, manages facility maintenance, inventory, ordering and cost control. The Director also acts as preceptor for Dietetic Interns and undergraduate students in the Department of Nutrition and Dietetics.

PRIMARY JOB REPSONSIBILITIES

  • Oversees the success and daily operations of both the Allied Health Building (including kitchen, full-service coffee bar, and bakery) and Education Union location (as well as managing catering as requested), including being present daily to supervise opening, service, and closing responsibilities; prepares and serves food; supervises and work closely with employees in performing these tasks

  • Assumes responsibility for daily kitchen operations and cleanliness; ensures all safety and sanitation policies and procedures are strictly adhered to; works with maintenance personnel to ensure that all equipment is functioning properly; adheres to health, safety, and sanitization standards, as required, to maintain positive Saint Louis City Health Department licensure and ServSafe standards

  • Creates menus and recipes for various items including grab 'n' go items, beverages, daily specials, sandwiches, wraps, flat breads, and bakery items in accordance with current trends and customer preferences; conducts frequent quality checks with employees to ensure recipes are followed correctly

  • Hires, trains, and schedules all student staff across kitchens, front of house and bakery; adjusts employee scheduling based on projected business needs

  • Completes advanced espresso/barista training through Blueprint Coffee partner; supervises daily operations of full-service espresso bar; arranges for employee training; ensures continuous training and quality checks of employees with barista status; upkeeps general espresso machine maintenance; maintains inventory of coffee products and inventory (coffee beans, matcha, house-made syrups, coffee bar cleaning supplies)

  • Maintains control and training for self and employees on the POS system; perform updates to the POS and employee POS training as needed

  • Maintains inventory of ingredients and supplies, controls inventory rotation in compliance with food standards, works with multiple vendors to place and receive weekly orders, timely follows-up on invoice payments; reviews financial information on a regular basis to assist with cost containment and ensures positive financial standing

  • Creates internal tracking mechanisms for data to allow for weekly adjustments in order to meet fiscal year financial sustainability goals

  • Acts as a preceptor of Dietetic interns and undergraduate students during their accreditation required clinical rotation in a cafeteria

  • Manages overall Fresh Gatherings presence on social media to promote offerings, maintain and grow customer base and inform followers of changes to menu and operations

  • Performs other duties as assigned

KNOWLEDGE, SKILLS, AND ABILITIES

  • Knowledge of advanced espresso and Barista training through Blueprint Coffee partner

  • Knowledge of food preparation, food safety, sanitation, and proper handling

  • Familiarity with computerized POS systems

  • Cross-cultural competency

  • Ability to use chemical cleaning agents

  • Ability to lift 50+ pounds and move inventory

  • Ability to stand and walk on hard flooring for long periods of time

  • Ability to tolerate a wide range of room temperatures

  • Ability to multitask and manage staff

  • Ability to communicate clearly and effectively to students and individuals from various backgrounds and educational levels

MINIMUM QUALIFICATIONS

  • Bachelor's degree in Nutrition and Dietetics or a closely related field

  • Registered Dietician certification

  • Readiness to obtain ServSafe Certification at Manager Level by start date

  • Readiness to complete Blueprint Coffee Barista Training program by start date

PREFERRED QUALIFICATIONS

  • Master's degree in Nutrition and Dietetics or a closely related field

  • One or more years of work experience in food service industry, preferably in large scale cafeteria setting

  • One or more years of work experience as a Barista or completion of an advanced Barista/espresso training course
